Bellicose Rose
Red Ale
She’s certainly sweet but has an edge. This feisty English red is a bold full flavored amber with crisp citrus hop finish which makes it very drinkable. Treat her right and she will surely delight.

The age old debate raged on - what makes a most noble brew. “It must be a hopped up IPA I contend.” “Nay, a full bodied stout.” “Crank up the IBUs!” “Rich roasted malts!” This must be settled once and for all. With reckless abandon I accepted the challenge, not fearing judgement. Days turned to nights. Nights turned to days. Alas, in the end, there could only be one. There must be a reckoning. A rich dark American Stout with a smooth malty flavor balanced by a significant hop profile and aroma.

Oak Aged Bourbon Imperial IPA
I had a vision. There was a bright light. Voices were calling me. “Son, everyone does IPA’s but you can do better.” So I wandered the craft beer wilderness for ages. Looking for answers. Looking for guidance. Yearning for divine counsel. In a burst of wisdom a revelation came to me. And there was Divinity! A bold American style IPA continuously hopped for a pronounced citrus and piney flavor and aroma. Aged with various bourbons in oak for a smooth finish to this big ale.

The fall hop harvest at the family farm in Erie County, New York offers a once a year opportunity to brew a wet hop IPA immediately after the hops are picked from the vine. This give s a unique wet grassy aroma and flavor that is unmistakably fresh.
